Ingredients
- 2 tablespoons finely chopped chives
- 1 teaspoon finely grated lemon zest
- Segments of 1 lemon, chopped
- 2 tablespoons vegetable oil
- 2 tablespoons white balsamic vinegar
- ½ teaspoon worcestershire sauce
Directions
- Combine all the ingredients and spoon over the oysters
Pickled Ginger And Wasabi Vinaigrette
Ingredients
- ¼ cup (60ml) light soy sauce
- 1 tablespoon finely chopped pickled ginger
- ½ teaspoon sesame oil
- 1-2 teaspoons wasabi paste
Directions
- Combine all the ingredients and spoon over the oysters
Chilli Vinaigrette
Ingredients
- 1 red chilli, finely chopped
- 1 lime, juiced
- ½ lemon, juiced
- 1 teaspoon sugar
- Freshly cracked black pepper
- Salt
- Good glug of olive oil
- 1 teaspoon ground cardamom
- Freshly chopped coriander leaves
Directions
- Combine all the vinaigrette ingredients and season with salt and pepper
- Spoon about a tablespoon of the dressing over each oyster
Red Wine Vinegar Vinaigrette
Ingredients
- ¼ cup red wine vinegar
- 3 shallots, finely diced
- ¾ cup olive oil salt and pepper
Directions
- Combine the vinegar, shallots, and olive oil together and mix well
- Season the dressing with salt and pepper and spoon over the oysters
Rice Wine Vinaigrette
Ingredients
- 1 teaspoon finely grated ginger
- 4 tablespoons rice wine vinegar
- 1 teaspoon castor sugar
- 1 teaspoon soy sauce
- 6 tablespoons grape seed oil
- 2 tablespoons olive oil
- ½ tablespoon lemon juice
- Chives, finely chopped
- 3 tablespoons salmon roe or ocean trout roe
Directions
- Whisk together all the ingredients in a bowl
- Spoon the vinaigrette over the oysters
- Sprinkle the oysters with chives and roe
